Chocolate and the Mind
High-quality chocolate, especially dark chocolate, contains natural compounds that directly support cognitive function. Flavonoids improve blood flow to the brain, increasing oxygen delivery and enhancing alertness, memory, and processing speed. From Bean to Bar: How Chocolate Is Made
The magic of chocolate begins long before it reaches a box or wrapper.
Chocolate starts with cacao beans, harvested from cacao pods grown in tropical regions. After harvest, the beans are fermented for several days — a critical step that develops chocolate’s complex flavor profile. The beans are then dried and roasted, enhancing aroma and richness.
Once roasted, the beans are cracked open to release cacao nibs, which are ground into a thick paste known as chocolate liquor (despite the name, it contains no alcohol). From there, chocolate takes different paths depending on its final form:
- Dark chocolate retains most cacao solids and cocoa butter
- Milk chocolate adds milk and sugar
- White chocolate contains cocoa butter without cacao solids
The chocolate is then refined and conched, a slow mixing process that smooths texture and balances flavor. Finally, it’s tempered, carefully heated and cooled to create the glossy finish, clean snap, and smooth melt chocolate is known for.
